Canning pics - FINALLY!

I was able to post pictures of some of my canning I did this past year. I sold most of it and gave many as gifts. Some of my best sellers were- Bread and Butter pickles, Raspberry Jalapeno jelly, Grape jelly and my Apple Butter. Zuchinni Relish was a hit too as was my sweet pepper relish.

More Jammin

I'm having trouble posting pics of my jellies. Since my last post I've made Habanero Gold Jelly and Peach Vanilla Syrup. Both very good. I made some Payday Bars the other day and they were very good too. If anyone wants to post some recipes let me know. I need more for Joe's cookbook.

Ended up having a three day weekend because of the weather. I canned Candy Apple Jelly, Lemon-Blueberry Jam and Apple Pie Jam on Friday. Then Sunday I canned some Honey-Blueberry Jam.
My favorite so far was the Lemon-Blueberry. I will take most of it to Lori's shop to sell. I also made a bunch of green shamrock chocolate suckers. Next is things for Easter.

Oatmeal Cream Pies


3/4 cup flour
1/2 t. baking soda
1/2 t. salt
1/4 t. baking powder
1/2 cup butter, softened
1/2 cup peanut butter
1/2 sugar
1/2 cup brown sugar, packed
1 egg
1 t. vanilla
1 cup quick cooking oats

Preheat oven to 350. Grease cookie sheets. In bowl combine flour, baking soda, baking powder and salt. Set aside. Cream butter and peanut butter till combined, beat in sugars till fluffy. Beat in egg and vanilla till combined. Stir in dry ingredients. Drop by rounded teaspoons onto cookie sheets. Bake for 8 to 10 min. Let cool.

Filling:

2 t. hot water
1/4 t. salt
1- 7oz. jar marshmallow cream
1/2 cup crisco shortening
1 cup powdered sugar

Combine hot water and salt until salt dissolves. Add marshmallow cream, shortening and powdered sugar. Beat until combined.
Frost one side of cookie, add top.
Makes about 13
